As a note, as the FF7R series is not finished and there are still unanswered questions in regard to everything going on including Vincent's backstory, I'm currently supplementing through parts of the original FF7 release and a dash of Dirge of Cerberus (but like not at a ton). Also worth noting that this application including personality section will include spoilers. Nothing heavy, but there are some notations here and there.

Personality:

It's easy to quickly ascertain that Vincent is just about every mysterious loner trope wrapped up in one Diet Dracula costume, as one might expect there's a bit more going on there than just what is displayed. In part, Vincent's coldness is less of a disdain for others and more of a disdain for himself, for the sins he perceives to have committed and desire to punish himself. This means, evidently, secluding himself away from the world in a dormant sleep for a few decades, suffering nightmares of his failures. This also means that Vincent, after not interacting with people in that amount of time, is really garbage at socializing.

Sure, he's aloof and probably the biggest loner out of the main party of the Final Fantasy VII franchise, but there are some distinct actions that he takes to show that he does have an attachment toward the others over the course of time, even in Rebirth. Toward the end of the Queen's Blood sidequest, Vincent goes out of his way to come to Cloud's rescue, but is still content to let him complete matters on his own. Although Vincent has not joined the party in terms of fighting fiends and other enemies, he still takes part in a few side missions as a guide and during the main story goes out of his way to help with investigations and securing escape routes. He is outright empathetic to other monsters that have been experimented on, commenting that some are capable of emotion and complex thoughts. Despite how detached Vincent makes himself out to be, the truth is that his heart is naturally soft and empathetic.

Of course, by having a heart that is more delicate than Vincent cares to express, it also means that Vincent is prone to taking on faults whether or not it actually applies to him. The infamous matter regarding the woman he admired and loved deciding to experiment on her own unborn child is something that Vincent blames himself severely for. Although he did bring up his concerns, they were dismissed by both the woman in question and Professor Hojo. In addition, Vincent mentions that he had many opportunities to basically execute Sephiroth, but admits he didn't have the strength to pull the trigger. Due to this, Vincent does also blame himself for all of the destruction Sephiroth has caused and will continue to do, another sin to bear. Being able to transform into a monster from Hojo's experiments is also how he feels about himself -- a sinful monster incapable of really helping anyone.

That isn't to say that Vincent is all doom and gloom, just mostly. He has a subtle sense of humor to him, such as complimenting the decor in the Ghost Hotel and remarking that he finds it "cozy". In addition, he jokingly follows up with "dibs on the coffin", perfectly self-aware of how he comes across. Plus, Vincent does find enjoyment in playing the Queen's Blood card game, and is considered a highly ranked player known as the Monster of Chaos. Even during a side quest with the party, Vincent teases Barret about his fear of ghosts, meaning it more for banter than to be cruel to the other man.

Basically, Vincent used to be something of a sweet, loyal dog that's ended up kicked too many times, has withdrawn as a result, but is slowly starting to warm up to others once again.

Abilities:

Shapeshifter - As a result of experimentation forced upon him, Vincent is capable of turning into at least two creatures. The only monster I will be willing to bring out at this time is the Galian Beast, a hulking monstrosity that somewhat resembles a mix of a Final Fantasy behemoth and some of Vincent's features combined. Strength is massively increased in this stage, as well as ferocity. In addition, the Galian Beast can cause flames to appear and burst. Technically, the other being that Vincent can shift into is Chaos, but as it has not yet been shown in the FF7R timeline, I am currently opting to leave that alone until we know more. Vincent can also apparently use his cloak to transform with him to obfuscate people getting a good look at him. I dunno man Advent Children wasn't real clear on this so that's what I'm going with.

Superhuman - After the experiments Vincent has endured, he has a few neat additions now that he isn't totally human anymore. He has some enhanced agility, regeneration, strength, and gives the middle finger to gravity when it's convenient. He doesn't fly so much as he just kind of moves around sometimes like he's halfway committed to floating but not 100%.

Immortality - Technically, Vincent has been killed. Upon being forced back to life from experimentations, this has somehow in turn caused Vincent to stop aging. Physically, he is still 27 despite approximately 30 years passing, and supplemental material suggests that he will remain immortal or at least hold a long lifespan.

Sleepy Bitch Disease - Vincent is capable of going into a coma-like sleep for years on end. Coffins, apparently, work great for this.

Materia - Like most people from his world, Vincent is capable of utilizing materia. They are stones that are condensed forms of mako, which is life energy of the planet. As such, materia contains knowledge and abilities, like casting a fire spell or healing. Currently, the only materia Vincent has really just functions to let him sufficiently control one of the monsters he harbors inside, not that he is currently aware of this.

Former Turk - The Turks essentially act as a special unit under Shinra. Whether it is out of being given the job to spy, assassinate, or function as a bodyguard, the Turks more or less do it all. The dirty work almost always falls to them, and that was the kind of training and life Vincent had once known in his younger years. As a result, Vincent is extremely skilled with firearms of most kinds.
